8 Tomatoes, medium
1/2 c bread crumbs, fresh, coarse
2 ts Salt
2 ts Pepper
1 ts Tarragon, dried
4 ts Honey
4 ts Butter

Directions to make Baked Honey Tomatoes

Step 1:Preheat oven to 350F. Slice off stem ends of tomatoes and carefully scrape out seeds. Place open side up in buttered baking dish.
Step 2:Mix bread crumbs, salt, pepper and tarragon. Drizzle honey over tomatoes, rubbing it down into cavities. Sprinkle tomatoes with crumb mixture and dot with butter.
Step 3:Bake uncovered for 30 minutes, till tomato skins begin to wrinkle. Place under broiler for another 5 minutes or till crumbs begin to brown.

Directions to make Scalloped Potatoes with Apples and Cinnamon

Step 1:Spray a 9×13-inch baking dish with non-stick cooking spray. Place alternate layers of sweet potatoes and apples in baking dish, ending with apples. Pour orange juice and zest over mixture and sprinkle with cinnamon.
Step 2:Bake, covered with foil, in preheated 375 degree oven, 40 minutes.
Step 3:Remove foil, top with crushed cereal or bread crumbs, and spray with cooking spray. Bake an additional 15-20 minutes, until golden brown.

Step 1:In a large skillet, bring 1inch of water to a boil. Add yams. Cover and simmer for 20 minutes or until they are tender. Drain.
Step 2:In a small bowl, mix orange peel, orange juice, brown sugar, salt, cinnamon and allspice. Pour over yams in skillet. Cook and stir until bubbly. Simmer, uncovered, for 5 minutes, spooning sauce over potatoes occasionally to make a glaze.

Ingredients to make Filled Squash Halves

2 ea Acorn Squash, Md
1 lb Lean Ground Beef
1 1/2 t Salt
1/2 t Cinnamon
2 c Apples, Pared & Chopped,(2 Lg)
1/4 c Raisins
4 tb Brown Sugar, Packed
2 tb Margarine Or Butter, Melted

Directions to make Filled Squash Halves

Step 1:Heat the oven to 400 degrees F. Cut each of the squash in half and remove the seeds and fibers. Place the squash, cut sides down, in an ungreased baking pan. Then add water to the depth of 1/4-inch and bake, uncovered, until the squash is tender, about 30 to 40 minutes.
Step 2:While the squash is baking, cook and stir the meat in a large skillet until it is brown. Drain off the excess fat. Remove the skillet from the heat and stir in the 1 1/2 ts of salt as well as the cinnamon, then coarsely chopped tart apples and the raisins.
Step 3:When the squash is cooked, turn them so that the cut side is up and remove them to a platter. Drain off any remaining liquid in the pan and dry. Scoop out the pulp from the acorn squash, making a shell that is 1/4-inch thick all the way around. Season the shells with salt to taste. Mash the pulp and mix in the meat mixture
Step 4:Return to the shells, piling them full and sprinkle with 1 tb of brown sugar on each. Drizzle with the melted butter. Bake uncovered until the apple is tender, about 20 to 30 minutes.

Step 2:Place 1/2 tsp. butter and 1/2 tsp. brown sugar in the cavity of each squash.
Step 3:Set the squash in the preheated oven and reduce the heat to 350°F. Roast for approximately 30 minutes. Using a spoon occasionally baste the top and inside of the squash with the sugar/butter mixture. Cool 5 minutes before serving.

Ingredients to make Cranberry Filled Acorn Squash

4 small acorn squash
8 tablespoons butter, or margarine
8 tablespoons honey
16 ounces whole-berry cranberry sauce

Directions to make Cranberry Filled Acorn Squash

Step 1:Wash and dry squash. Place squash in microwave Oven and heat, uncovered, 15 minutes or until they feel soft to the touch. Let stand 5 minutes.
Step 2:Cut in half and remove seeds. Sprinkle with salt. Place 1 tablespoon of butter and 1 tablespoon of honey in each half. Heat, uncovered, in microwave oven for 4 minutes or until butter has melted. With a brush or spoon, spread honey-butter mixture over cut surfaces of squash.
Step 3:Place a spoonful of cranberry sauce in each squash half. If warmed cranberry sauce is desired, return filled squash halves to Microwave Oven for 6 minutes or until cranberry sauce is hot.

2 1/4 lb Cooked peeled yams
1/3 c Sugar
1/3 c Brown or maple sugar
Egg substitute equivalent to 1 egg
1 1/2 ts Grated orange rind
1/3 c Raisins
1 1/2 ts Freshly grated nutmeg
3/4 ts Salt
6 tb Melted butter or margarine

SAUCE:
1 c Maple syrup
1 ts Grated lemon rind
2 tb Lemon juice

Directions to make Sweet Citrus Yams

Step 1:Coat an 8\” ring mold with melted butter. Put in freezer to harden butter. Then dredge mold with flour.
Step 2:Whip together yams, sugar, nutmeg, salt, butter, egg substitute and grated orange rind until smooth. Press the mixture into the mold. Bake at 375 F. for 30 minutes. Turn out on a plate and serve with Sauce.
Step 3:To make the sauce, mix together sauce ingredients and heat. Serve warm, drizzled over Yams.

Step 1:Melted butter. Quarter potatoes & boil for 15 mins until tender. Place potatoes in a bowl and mash
Step 2:Boil cabbage for 10 minutes, drain well. Melt butter in a large pan. Add cabbage and spring onion and cook for 60 seconds. Add cabbage mixture to bowl of mash and add milk gradually until a creamy consistency has been achieved.
Step 3:Season with the ground black pepper and serve. May be garnished with chopped parsley .

Step 2:Mix the other ingredients. Turn squash cut side up, fill with apple mix and continue baking for 20 minutes, or until squash is tender.
