Ingredients to make Vegetable Lasagna with Tomato Basil Sauce

Tomato-Basil Sauce
.2tablespoons olive oil
.4medium carrots, thinly sliced
.3medium zucchini, thinly sliced
.6ounces spinach leaves, washed, stemmed and torn in bite-size pieces
.1/4teaspoon salt
.1/4teaspoon black pepper
.1egg
.3cups ricotta cheese
.1/2cup plus 2 tablespoons grated Parmesan cheese, divided
.12uncooked lasagna noodles
.1-1/2cups (6 ounces) shredded mozzarella cheese
.1-1/2cups (6 ounces) shredded Monterey Jack cheese
.1/2cup water
.Belgian endive leaves, Bibb lettuce leaves and fresh basil sprigs (optional)

Directions to make Vegetable Lasagna with Tomato Basil Sauce

Step 1:

Prepare Tomato-Basil Sauce. Heat oil in large skillet over medium heat until hot. Add carrots; cook and stir 4 minutes. Add zucchini; cook and stir 8 minutes or until crisp-tender. Add spinach; cook and stir 1 minute or until spinach is wilted. Stir in salt and pepper.

Step 2:

Preheat oven to 350°F. Beat egg in medium bowl. Stir in ricotta cheese and 1/2 cup Parmesan cheese.

Step 3:

Spread 1 cup Tomato-Basil Sauce in bottom of 13X9-inch baking pan; top with 4 uncooked lasagna noodles. Spoon 1/3 of ricotta cheese mixture over noodles; carefully spread with spatula.

Step 4:

Spoon 1/3 of vegetable mixture over cheese. Top with 1 cup Tomato-Basil Sauce. Sprinkle with 1/2 cup each mozzarella and Monterey Jack cheeses. Repeat layers 2 times beginning with noodles and ending with mozzarella and Monterey Jack cheeses. Sprinkle with remaining 2 tablespoons Parmesan cheese

Step 5:

Bake lasagna 1 hour or until bubbly. Uncover. Let stand 10 to 15 minutes. Cut into squares. Garnish, if desired.

Ingredients to make Creamy Spinach Soup

1 lg Onion, coarsely chopped
6 c Water
3 Potatoes, peeled & chopped
3 Zucchini, thickly sliced
1 tb Low-sodium soy sauce
2 c Fresh spinach leaves, tightly packed
Pepper; black to taste
1/3 c Enoki mushrooms, trimmed (optional)

Directions to make Creamy Spinach Soup

Step 1:Place onion in a large pot with 1/2 cup water. Cook and stir until onion softens slightly, about 3 minutes. Add remaining 5 cups of water, potatoes, zucchini, and soy saue. Bring to a boil, reduce heat, cover and simmer for 35 minutes.
Step 2:Add spinach and pepper. Cook for another 2 minutes. Remove
Step 3:from heat. Puree soup in batches in blender. Return to pan. Add mushrooms if desired. Heat gently for 5 minutes. Serve hot.

Ingredients to make Spinach Lobster Fruit Salad

3 8 oz lobster tails; fresh or frozen
1 md Pink grapefruit; peeled, sectioned
1 md Orange; peeled and sectioned
1/4 c Orange yogurt
3 tb Orange juice
1 tb Fresh lemon juice
1 ts Grated orange rind
1 ts Grated lime rind
1/8 ts White pepper
4 c Fresh spinach leaves; torn
2 ts Fresh chives; chopped

Directions to make Spinach Lobster Fruit Salad

Step 1:Cook lobster tails in boiling water 6-8 minutes or until done; drain. Rinse with cold water. Split and clean tails. Cut lobster meat into bite-sized pieces. Combine lobster, grapefruit sections and orange sections.
Step 2:Combine yogurt, juices and rinds with white pepper in a small bowl; stir with a wire whisk until well blended. Pour over lobster mix.
Step 3:Arrange spinach on individual serving plates. Top each serving with 1 cup of the lobster mix. Sprinkle with chives.

1/4 ts Turmeric

2 Green chilies (optional)

5 tb Butter
1 pn Salt
1 tb Lemon juice

Directions to make Blended Tomato and Spinach

Step 1:Place spinach, tomatoes, onions, turmeric, ginger and chilies in a saucepan with 1 cup water. Cook, covered, 15 mins over medium-low heat. Remove from heat and cool.
Step 2:Blend in an electric blender to a creamy consistency.
Step 3:Heat butter in a saucepan. Add spinach mixture and salt to taste. Cook for 5 mins over low heat. Add lemon juice and serve.

Step 1:Saute onion and garlic in butter until soft. Add spices and cook a few minutes to rid them of any rawness
Step 2:Mix in spinach, yogurt, and salt to taste. Serve.

1 lb Broccoli,cut into 1/4 inch pieces,stem included
1/4 lb Fresh spinach
1/2 c Water
2 tb Grated coconut

Directions to make Broccoli Spinach Spread

Step 1:Heat oil in non-stick frying pan over medium-low heat. Add cumin & pepper flakes & fry for 1/2 minute. Stir in lime juice, salt, pepper, vegetables & water.
Step 2:Cover & simmer until the vegetables are reduced to a chunky puree (45 to 60 minutes). Stir occasionally.
Step 3:Serve with an assortment of crackers.
