1 lb Shrimp shelled and cleaned
1 1/2 lb Cleaned asparagus
1 Thin lemon slice
1/4 c Sliced green onion
2 tb Minced parsley
1 md Diced tomato
Lettuce leaves
1 oz Grated Monterey jack cheese

DRESSING
1/2 c Salad oil
4 tb Vinegar
1/4 ts Salt
Dash cayenne
1/8 ts Pepper
1 tb Parsley
1 tb basil
1 tb Oregano
1 tb Chervil

Directions to make Zesty Shrimp Salad

Step 1:Cook shrimp; drain and set aside. Cook asparagus until crisp- tender; drain well. Place shrimp, asparagus and lemon slice in mixing bowl. Pour herb dressing over all, cover and chill well, stirring once or twice.
Step 2:Combine onion, parsley and tomato. To serve, drain shrimp asparagus mixture and arrange on plate with lettuce and cheese. Serve with tomato mixture.
Step 3:DRESSING: Combine oil, vinegar, salt, cayenne, pepper, parsley, basil, chervil and oregano.

Step 1:Spray a 9×13-inch baking dish with non-stick cooking spray. Place alternate layers of sweet potatoes and apples in baking dish, ending with apples. Pour orange juice and zest over mixture and sprinkle with cinnamon.
Step 2:Bake, covered with foil, in preheated 375 degree oven, 40 minutes.
Step 3:Remove foil, top with crushed cereal or bread crumbs, and spray with cooking spray. Bake an additional 15-20 minutes, until golden brown.

Ingredients to make Baked Vegetable Salad

1 lg eggplant
2 lg Bell peppers, red or green
2 lg Celery stalks
Olive oil for sauteeing
2 ea Garlic cloves, minced
1/4 c Olive oil
1/4 c Red wine vinegar
1 ts Oregano
Salt & pepper
1/4 c Black olives, chopped

Directions to make Baked Vegetable Salad

Step 1:Preheat oven to 400F. Place whole eggplant, unpeeled, on a rack in oven. Wrap the two peppers & celery stalks individually in aluminum foil & place them on rack as well. Bake for 30 minutes. Remove peppers & celery & let cool. Bake eggplant for another 15 minutes. It should be very tender & have collapsed.
Step 2:When vegetables are cool enough to handle, peel eggplant, cut into several pieces & drain in a colnder for 20 minutes. Squeeze out some of the excess moisture. Chop peppers, removing stems & seeds. Leave in large pieces. Chop celery into 1/2\” pieces. Dice eggplant & combine with peppers & celery in a large bowl.
Step 3:Heat a few drops of olive oil in a skillet & saute the garlic till golden. Add to the bowl. Add remaining ingredients & mix thoroughly. Cover & let stand for 1 hour at room temperature before serving.

1 1/4 lb Potatoes (3 or 4)
2 tb Butter, melted
1 c Flour, all purpose

Directions to make Fried Potato Pancakes

Step 1:Peel and halve potatoes; put in large saucepan with enough water to cover. Bring to boil; simmer, covered, 20 to 30 minutes, until fork-tender. Drain well; return to saucepan over low heat. Add butter; mash potatoes well. Stir in flour and salt.
Step 2:Gather mixture into a ball; turn onto lightly floured surface. Knead lightly until smooth. Divide dough in half.
Step 3:Roll out one half into an 8 in. (20 cm) circle, about 1/4 in. thick. Cut into quarters; set aside. Repeat with remaining dough.
Step 4:In large nonstick skillet, heat half the oil over medium-high heat. Cook dough quarters in batches, 2 minutes on each side or until golden brown, adding more oil as necessary. Serve warm.

Step 2:In a small bowl, mix orange peel, orange juice, brown sugar, salt, cinnamon and allspice. Pour over yams in skillet. Cook and stir until bubbly. Simmer, uncovered, for 5 minutes, spooning sauce over potatoes occasionally to make a glaze.

Step 1:Pare the sweet potatoes and cut into short sticks about 1/4\” thick (if you have a food processor with a disk designed for french fries, use that). Heat the oil and butter in a wok or skillet over medium-high heat; don\’t let the fat brown
Step 2:Add the potato sticks and toss to coat; season with salt, white pepper, about 1/4 ts each of ginger, cardamom, and a small pinch of cloves. Add 1/2 cup water, adjust the heat to medium-low, and cook, tossing often, but gently, for about 5 minutes, adding drops of water if needed to prevent sticking.
Step 3:Add the honey and continue to toss-cook until the sticks are just tender and nicely glazed, perhaps 3 minutes. Check the seasonings and serve promptly.

Step 1:Trim artichokes stems to 1/2 inch. Place upright in large kettle and add enough water to cover. Add lemon juice, 1 tablespoon salt, pepper, oregano and red pepper flakes. Bring to boil, reduce heat and simmer about 1 hour or until leaves pull easily from base of artichokes.
Step 2:Remove from pan and invert artichokes to drain thoroughly and cool. Using spoon, remove chokes and discard.

3 oz Olive oil
7 oz Onion, chopped

4 tb Honey
3 1/4 oz Orange juice
1 oz Tofu balls

Directions to make Vegetarian Sweet & Sour Soup

Step 1:Heat oil & saute onions till translucent. Add cabbage & saute 5 minutes more. Add tomatoes, water, lemon juice, honey & simmer for 15 to 20 minutes. Season with salt & pepper & remove from heat. Let Cool.
Step 2:Pour soup into food processor & puree to a smooth consistency. Refrigerate for 6 to 8 hours. Before serving, blend soup with orange juice. Place tofu balls in a dish & pour soup over the top. Garnish with julienned cabbage & chervil leaves.
