Ingredients to make Fried Potato Pancakes

1 1/4 lb Potatoes (3 or 4)
2 tb Butter, melted
1 c Flour, all purpose
1/2 ts Salt
4 ts Vegetable oil

Directions to make Fried Potato Pancakes

Step 1:Peel and halve potatoes; put in large saucepan with enough water to cover. Bring to boil; simmer, covered, 20 to 30 minutes, until fork-tender. Drain well; return to saucepan over low heat. Add butter; mash potatoes well. Stir in flour and salt.
Step 2:Gather mixture into a ball; turn onto lightly floured surface. Knead lightly until smooth. Divide dough in half.
Step 3:Roll out one half into an 8 in. (20 cm) circle, about 1/4 in. thick. Cut into quarters; set aside. Repeat with remaining dough.
Step 4:In large nonstick skillet, heat half the oil over medium-high heat. Cook dough quarters in batches, 2 minutes on each side or until golden brown, adding more oil as necessary. Serve warm.

Ingredients to make Indian Spiced Sweet Potato Fries

2 md Sweet potatoes
1 1/2 tb Vegetable oil
1 ts Curry powder
1/4 ts Turmeric
1/4 ts Cumin
1/4 ts Ginger powder
1/2 ts Salt

Directions to make Indian Spiced Sweet Potato Fries

Step 1:Pre-heat oven to 400F. Wash & scrub potatoes, leaving the skins on. Cut them into sticks & set aside.
Step 2:Mix together spices & oil. Add potato sticks to mixture & coat well. Lay onto a cookie sheet & bake for 30 to 40 minutes. Stir them half way through cooking.

Carrot-Pineapple Cake

Ingredients to make Carrot-Pineapple Cake

1/2 c Low Fat margarine,softened
3 Eggs** For low fat use egg substitute
1 c Thawed frozen unsweetened pineapple juice concentrate
2 ts Vanilla
2 1/2 c All-purpose flour
2 ts Baking powder
1 ts Baking soda
1 ts Ground nutmeg
1 ts Ground cinnamon
1/4 ts Salt
3 c Shredded carrots

ICING
8 oz Cream cheese, softened
1 cn (8 oz) crushed pineapple in unsweetened juice,drained
1 ts Vanilla

Directions to make Carrot-Pineapple Cake

Step 1:Preheat oven to 350 degrees F. Beat butter in large bowl until creamy. Blend in eggs, pineapple juice concentrate and vanilla. Combine flour, baking powder, baking soda, spices and salt. Gradually add to egg mixture, beating until well blended. Stir in carrots.
Step 2:Spread batter evenly into greased 12 x 8 inch baking dish. Bake 30 minutes or until wooden pick inserted in center comes out clean. Cool completely on wire rack.
Step 3:Prepare Icing by combining all ingredients. Spread over cooled cake.
