Ingredients to make Cucumber Dill Dip

1 md Cucumber
1/4 ts White Pepper
1 1/2 c Mayonnaise
3/4 c Sour Cream
1/4 c Green Bell Pepper, Diced
2 tb Fresh Dill, Chopped, OR
2 ts Dried Dill, Crushed

Directions to make Cucumber Dill Dip

Step 1:Peel, seed and finely dice the cucumber. Using a colander, squeeze out any excess water from the cucumber chunks. Place in a bowl and blend will with the pepper and dill.
Step 2:Blend in the remaining ingredients and mix thoroughly. Cover and chill. Makes about 3 cups of dip.
Step 3:SUGGESTED DIPPERS: broccoli, cauliflower, Radishes, Carrots, Onion Crackers.

Step 1:Combine all of the ingredients in a medium saucepan. Bring to a boil, reduce to a simmer and cook, uncovered, about 20 minutes. The liquid should be reduced by one-third and the tomato skins should be falling off. Set aside to cool.
Step 2:Break up tomatoes with fork, to bite size chunks. Refrigerate.

1 1/2 lb Eggplant
3 tb Lemon juice
1 ts Salt
2 ts Minced fresh garlic
3 tb Sesame tahini substitute — yogurt or sour cream
1/4 c Chopped parsley
1/2 c Toasted pine nuts
2 tb Olive oil

Directions to make So Good Baba Ghanoush

Step 1:Preheat oven to 400 degrees F. Prick eggplant all over with a fork. Bake whole until tender (about 30 minutes). Remove from oven, halve and scoop out the flesh. Blend in a food processor with the lemon juice until smooth.
Step 2:Mash the salt and garlic together and combine with the eggplant, along with the tahini. Cool and stir in the parsley and pine nuts. Before serving, drizzle with the olive oil.

Ingredients to make Vegetable Chutney with Garlic

2 tb Olive or vegetable oil
1 md Onion,chopped
1/2 ts Salt
2 md tomatoes,seeded,chopped
2 Cl Garlic, crushed
1 md Eggplant, pared and cubed
1/4 c Chopped parsley
1/4 c Currants
2 tb Tarragon vinegar

Directions to make Vegetable Chutney with Garlic

Step 1:Heat oil in 12-inch skillet over medium heat. Cook onion and garlic in oil about 2 minutes. Stir in eggplant and salt. Cook over medium heat 15 minutes, stirring occasionally.
Step 2:Add remaining ingredients. Cook 15 minutes longer, stirring occasionally, until vegetables are soft and no excess liquid remains.
Step 3:microwave: Place onion, garlic and oil in 3-quart microwavable casserole. Cover tightly and microwave on high 3 to 4 minutes or until onion is softened. Add eggplant and salt. Cover tightly and microwave 3 minutes. Add remaining ingredients. Cover tightly and microwave 3 to 5 minutes longer or until vegetables are soft. Let stand 5 minutes.

1 1/2 tb Fresh-sqeezed lemon juice
1/4 ts Ground cumin
1/8 ts garlic powder
1/2 Tomato, diced
1 Scallion, sliced
1 Canned green chili, chopped

Directions to make Broccomole

Step 1:In a food processor, blend the broccoli stems with the lemon juice, cumin, and garlic powder until completely smooth. Add the remaining ingredients and mix well by hand, but do not blend.
Step 2:Chill before serving for best flavor.
