Ingredients to make Filled Squash Halves

2 ea Acorn Squash, Md
1 lb Lean Ground Beef
1 1/2 t Salt
1/2 t Cinnamon
2 c Apples, Pared & Chopped,(2 Lg)
1/4 c Raisins
4 tb Brown Sugar, Packed
2 tb Margarine Or Butter, Melted

Directions to make Filled Squash Halves

Step 1:Heat the oven to 400 degrees F. Cut each of the squash in half and remove the seeds and fibers. Place the squash, cut sides down, in an ungreased baking pan. Then add water to the depth of 1/4-inch and bake, uncovered, until the squash is tender, about 30 to 40 minutes.
Step 2:While the squash is baking, cook and stir the meat in a large skillet until it is brown. Drain off the excess fat. Remove the skillet from the heat and stir in the 1 1/2 ts of salt as well as the cinnamon, then coarsely chopped tart apples and the raisins.
Step 3:When the squash is cooked, turn them so that the cut side is up and remove them to a platter. Drain off any remaining liquid in the pan and dry. Scoop out the pulp from the acorn squash, making a shell that is 1/4-inch thick all the way around. Season the shells with salt to taste. Mash the pulp and mix in the meat mixture
Step 4:Return to the shells, piling them full and sprinkle with 1 tb of brown sugar on each. Drizzle with the melted butter. Bake uncovered until the apple is tender, about 20 to 30 minutes.

Juice of 2 limes
1-2 Tbsp Fish sauce
3 Red chilies,finely sliced
Cilantro, and mint leafs to garnish
Salt and pepper to taste

Step 1:Grill the steaks until medium. Then thinly slice.
Step 2:Add cucumber, green onion, red onion, lemon grass, and red chilies to the beef.
Step 3:Add in lime juice, fish sauce, salt and pepper to the beef. Mix everything well. Garnish with cilantro and mint.

Ingredients to make Homestyle Corned Beef Cabbage Soup

2 Lb. corned beef
7 C. water
1 beef flavor bouillon cube OR 1 tsp. instant beef bouillon
1/2 C. coarsely chopped onion
2 garlic cloves, sliced
6 peppercorns**
2 whole cloves**
6 new potatoes, unpeeled, quartered
3 carrots,julienned
6 C. very coarsely chopped cabbage

**If corned beef is packaged with its own spice packet, substitute packet for peppercorns, cloves and bay leaf, if desired.

**Two medium potatoes, peeled and cut into 1-inch cubes can be substituted for new potatoes.

Directions to make Homestyle Corned Beef Cabbage Soup

Step 1:In 5 quart Dutch oven, combine corned beef and water. Bring to a boil. Reduce heat; cover and simmer 15 minutes. Skim off any scum that rises to the surface. Add bouillon cube, onion, garlic, peppercorns, cloves and bay leaf. Simmer covered an additional 3 to 4 hours or until meat is tender.
Step 2:Remove meat from broth; cool. skim fat from broth. Cut meat into bite-size pieces; return to broth. Stir in carrots and potatoes. Bring to a boil. Reduce heat; cover and simmer 15 minutes. Remove meat from broth; cool. skim fat from broth. Cut meat into bite-size pieces; return to broth. Stir in carrots and potatoes. Bring to a boil. Reduce heat; cover and simmer 15 minutes. Stir in cabbage. Simmer covered an additional 15 minutes or until all vegetables are tender. Remove peppercorns, cloves and bay leaf.
